TM "Zapalnychka" is a family business of the Puzanovy family from Zaporizhzhia. They work here according to the principle: do, what can you, with that, what do you have, there, where you are.Hot peppers are grown in their own vegetable garden, they invent recipes for spicy sauces from it, they prepare and promote products themselves. Actually,thanks to the recipe - original and at the same time authentic - hellish Zaporizhia sauces became recognizable on the market of craft seasonings.
Maksym Puzanov, the founder of Zapalnychka TM, told exclusively for ItsCraft about the peculiarities of the production of pepper sauces and the continuation of the culinary traditions of the past in the family business.
Hot? Sharply!
Zaporizhzhya "Zapalnychka" "ignited" craft cooking in 2017year.to Maxim, whose dad is a technician-food industry technologist, and mother is an agronomist, it was time to look for another occupation for self-realization. In addition, my parents had plots of land outside the city, where you could farm and grow vegetables.
Cossack land is hot, what you don't plant in it - the fire will ignite in it. So Maxim decided to grow hot peppers, to make hellish sauces out of them.Tatyana's wife, an economist and accountant, supported her husband's enthusiasm. When Maksym's culinary hobby began to emerge as a business idea, began to help him with sales.Later, the son of Ilya made his contribution to the family business - the guy responsible for the promotion of the product in social networks.And then the parents of the couple joined.Their job is to grow raw materials in the garden.
The highlight of TM "Zapalnychka" seasonings is their sharpness.Signature offer of crafters - "Infernal caddies".
"It is important for us to make a modern product, but to preserve the Ukrainian taste tradition.So we started making fermented pepper sauces.The process was kept authentic, but already the technology, the recipe is our own,- says Maksym Puzanov.- Sauces are prepared either by the salting method, as it was done in ancient times for that, to save products, or made on the basis of fermented peppers, i.e. re-fermented in oak barrels.In them, the products are in a living, healthy state and saturated with a tart natural aroma.From here, actually, and the name is "Infernal Khadibs".Fermented pepper sauces are something incredibly tasty, aromatic and spicy!»

Manufacturers use more than ten varieties of hot pepper to prepare sauces - like Ukrainian vegetables, and well-known throughout the world NAbanero, Jalapeno, Trinidad Scorpion, several varieties Chilli, Aji Charapita. Each type of pepper gives its own spiciness to the sauce - you just have to choose your own, appropriate for a juicy steak, pizza, lard, jelly or morning omelet.
Next to the classic pepper sauces, the line of seasonings from the "Zapalnychka" brand also includes dried habaneros, green adjika with walnut, chili oil with garlic, pickled hot peppers and roasted chilies as spices.

All ingredients for sauces and seasonings are natural, grown on home beds.A full-scale invasion almost stopped this process, but Ukrainians are therefore Ukrainians, that will definitely find a way out of a difficult situation.
"We live in Zaporizhzhia, we are also staying here now.Previously, the raw materials were grown outside the city by their parents - in the villages of Bilmatskyi and Orihivskyi districts.All the conditions for growing peppers were created there,- says Maksym.- But after the invasion of the occupiers, my parents were forced to leave everything and leave their village.His wife's parents remained, although it is very dangerous with them - the village is constantly under fire. Actually,so as not to endanger the parents, not yourself, we decided to organize the cultivation of our peppers in Zaporizhzhia. More precisely, in the Zaporizhia district.They rented several country plots, whose owners went abroad, organized watering... This is how we work".
War is not a reason to give up
The life principle of the Puzanov family is the same, as well as at work:do that, facing, and there, where it is needed.Now they make sauces, to diversify Ukrainian gastronomy.They develop business, to support its economy.Earn money, to help the army, which protects Ukraine.And they share their experience with people, with which to restore the country after the victory.
"In addition to working at the enterprise,I am also the chairman of the board of the garden cooperative,- adds Maxim.- Even before the start of a full-scale invasion, he proposed a project to develop a joint well.We made it, when there was already a war,- all thanks to our gardeners, which about united, despite the challenges of time.The well came in very handy, when the Kakhovska HPP was blown up.It was then that many garden societies of the Zaporizhia district were left without water.Now we share this experience and help other cooperatives".
Maksym Puzanov is convinced:war is not a reason to give up.On the contrary, it is necessary to look for opportunities to develop.In the near future, the creators of "Zapalnychkas" plan to improve production and develop new recipes for sauces.And the main inspirer of the family business is preparing to become a master of food technology.Academic knowledge will not interfere with craft ideas.
